Recipe: Crispy Butter Cookies
1 cup butter (no substitutes),
softened
1-1/2 cups confectioners sugar
2 egg whites
1 tsp. Vanilla
2-1/2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
Sugar
In a mixing bowl, cream butter and
confectioners sugar. Beat in egg
whites and vanilla. Combine flour,
baking powder and baking soda;
gradually add to the creamed
mixture. Roll into 1-1/2" balls,
then roll in sugar. Place 2 in.
apart on greased baking sheet.
Flatten with a fork.
Bake at 350 degrees for 12/14
minutes or until edges are lightly
browned.
Remove to wire racks and cool.
About 4 dozen.
