Recipe: Apple Cheddar Cookies
1/2 cup margarine (1 stick)
1/2 cup sugar
1 egg
1 tsp. vanilla extract
1-1/2 cups flour
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
1-1/2 cups shredded sharp Cheddar
cheese
1-1/2 cups peeled chopped apples
1/4 cup chopped pecans
In a large mixing bowl, cream
margarine and sugar until light
and fluffy; stir in egg and
vanilla extract. In a separate
bowl, combine flour, baking soda,
cinnamon and salt; mix well.
Slowly add dry ingredients to
margarine mixture; mix well. Stir
in cheese, apples and pecans. Drop
by rounded teaspoonfuls onto
ungreased cookie sheet.
Bake 15 minutes at 375 degrees.
Makes 4 and 1/2 dozen.
