Recipe: Kansas Lime Cookies
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon cinnamon
3/4 cup unsalted butter
1 cup sugar
finely grated zest of 2 limes
3 tablespoons fresh lime juice
1/3 cup sugar mixed with 1/4
teaspoon nutmeg and 1/4 teaspoon
cinnamon
Preheat oven to 350 and grease
cookie sheets. Cream butter,
sugar, and lime zest until light
and fluffy. Gradually beat in lime
juice. Add dry ingredients 1/2 cup
at a time. Roll dough into 1-inch
balls and roll in sugar-spice
mixture. Arrange on cookie sheets
and flatten with the bottom of a
glass. Bake for 10-12 minutes.
Makes 4 dozen, 60 calories.
