Dropped cookies are when you just drop spoonfuls of batter onto the baking sheet. Rolled cookies you have to roll out with a rolling pin and cut with a cookie cutter. I am not exactly sure what pressed cookies are but I believe they are similar to rolled cookies except there is a pattern on the cutter that get pressed onto the cookies.

The difference is the method. Drop cookies are dropped from a spoon. Rolled cookies are rolled out and cut. Pressed cookies are made by forcing the dough through a cookie press.
