How to make these ok (healthy-wise) cookies into healthier snacks?

“Healthy snacks with Girl Scout Cookies”? Isn’t that an oxymoron? LOL I think they’re absolutely perfect as is, especially the Thin Mints. Not sure how to make them healthy, unless you crumbled them up and put them into Vanilla yogurt?

    Girl Scout Cookies are not healthy. If you are going to enjoy them enjoy them fully. Even the low fat ones are full of sugar.

    Thin Mint Cookie Cake

    6 ounces Butter
    1 cup Sugar
    1 Box GS Thin Mint cookies
    (1 cup crumbs for cake)
    (1 cup crumbs for topping)
    2 tablespoons Cocoa
    1/3 cup Cake flour
    8 Eggs, separated
    8 ounces Chocolate
    1/4 cup Heavy cream

    Cream butter and sugar together until fluffy. Add egg yolks, one at a time. Add cocoa and a cup of Thin Mint cookie crumbs. Add flour and mix until just combined. Whip egg whites until stiff but not dry/ Fold egg whites into batter. Bake in 9″ pan at 350F for 35 minutes. Allow to cool with for 15 minutes, then remove from pan. Cool on wire rack. Top cake with chocolate cream (8 oz. chocolate melted with 1/4 cup heavy cream) Top chocolate cream with 1 cup Thin Mint cookie crumbs. Finish with powdered sugar. Not for the diet/cholesterol conscious but well worth the effort!

    Healthy snacks and any kind of cookie is not a statement that goes together.

    Serve the cookies with yogurts, apple sauce, cottage cheese, fruits. to make it a bit more healthy.

    In the future don’t even think girl scout, cookies, and health go together.

    GS should rethink their fundraising and sell fruits

    Basically, serve them with healthy stuff. Like use cookie crumbs to make a crust for a fruit torte, or serve reasonable portions with milk and juice.

    Use them as garnish on a fruit salad.

    Present this question to a troop of Girl Scouts and let them brainstorm ideas – then they can learn, too!
