Check out her channel at Vegan Lemon Drop Cookies Recipe Ingredients: 1 1/4 cup all purpose flour 1/4 tsp baking powder 1/8 tsp salt 1/2 cup Earth Balance Vegetable Spread or other vegan margarine 1/4 cup powdered sugar 2 Tbsp granulated sugar Zest of 1 large lemon Juice of 1/2 lemon (about 2 Tbsp) Directions on how to make Vegan Lemon Drop Cookies: 1. Cream together powdered sugar and vegan margarine 2. In a separate bowl whisk together all purpose flour, baking powder, and salt 3. In another bowl, yes #3, mix together the granulated sugar and lemon zest. 4. Add the lemon zest/sugar mixture to the vegan margarine mixture, along with the lemon juice. 5. Using an electric mixer to combine the cookie dough. 6. Lastly and slowly, mix in flour mixture with the rest of the ingredients. 7. Allow lemon drop cookie dough to chill in the refrigerator for at least 30 minutes. 8. Roll lemon drop cookie dough into 1 inch balls and arrange on baking sheet lined with parchment paper 9. Preheat oven to 375 F, then bake cookies for 10-12 minutes. 10. Allow the Lemon Drop Cookies to cool of a cooling rack. Vegan Lemon Glaze Ingredients: 1/2 cup powdered sugar Juice of 1/2 lemon Directions on how to make lemon glaze or icing for cookies: 1. Slowly add lemon juice to powdered sugar until desired consistency is achieved. Vegan Lemon Drop

    Delicious! I used coconut oil in place of vegan butter, and it worked well. I decided to flatten mine down a bit with a spoon when i put them in the oven. I also ran out of parchment paper but what worked well was aluminum foil coated with oil and sprinkled with flourThanks Sweetest Vegan.

    Um…no. Some brands of white granulated sugar (such as Domino) were filtered using ground animal bones. However, there are plenty of companies that process and sell white granulated sugar without the use of animal bones. I have been a vegan for many, many years. Sugar is vegan. You just have to do a bit of research.

I tried out three of your cookie recipes and they were real great. They were quite easy to make and I love the way you’re making vegan look like fun ;-) You have such a nice, warm attitude.
