So, I have a friend bringing over her son to have a Valentines Day Cookie Making Party in about 30 minutes. I have a recipe for the cookies but I need a recipe for the icing that gets hard so that they can take some home with them. I don’t have any corn syrup, or time to go to the store. Thanks!

Cookie cutter sugar cookies

Ingredients
2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons unsalted butter
1/3 cup vegetable shortening
3/4 cup sugar
1 egg
1 tablespoon whole milk
1 1/2 teaspoons pure vanilla extract

Method
Preheat oven to 350°. Line a cookie sheet with parchment paper.
Stir together flour, baking powder and salt. In a large mixer bowl beat butter until butter is softened.

Add sugar and beat until fluffy add egg milk and vanilla and beat well. Add flour mixture and beat until well mixed. Divide dough in half. Cover and chill at least 3 hours or until easy to handle. Roll dough 1/8 inch thick. Cut with your favorite cookie cutters. Place on cookie sheet and 7 to 8 minutes. Remove from oven. Cool on pan 5 minutes. Remove to cooling racks and let cool completely before frosting, if desired.

Makes 36 to 48 cookies.

Creamy Icing
In a small bowl beat 1 egg white, 2 teaspoons lemon juice or vanilla. and enough powdered sugar [1 1/2 2 cups] to make icing of piping consistency. Spread icing on cookies, let dry. If desired, add a drop or two of food coloring, spoon into a zipper style plastic bag, forcing the icing to the corner. Make a small hole in the corner and use to pipe decorations onto cookies.

Q&A: how do I make spritz cookies without a cookie press?

Question by kcdana: how do I make spritz cookies without a cookie press?
I want to make spritz cookies, but I don’t have a cookie press. Can I just drop them by teaspoon onto cookie sheet?

You could do that, but they really wouldn’t be spritz cookies. You really need that little cookie press to make those dainty little designs. I would would use a cookie cutter if you have one, to give it a design and then use the colored sugar.

You might be able to make cutters out of cardboard, but they won’t last very long (and might not work, depending on how firm the dough is). You also might have a problem finding clean cardboard.

If you’re using a firm dough, you might be able to roll it extra thick (an inch or so), cut the shape with a knife, and then cut thin slices off the shape for baking.

Another option might be to roll it out normally and cut some circles using a glass. Stack them up on top of each other with wax paper in between each one. Then, use a knife to shape the entire stack at once. This is similar to the last idea, but you won’t have to slice it off.

Keep in mind, I have no idea if any of these ideas will work since I just thought of them and haven’t tried them yet.

Dont eat uncooked cookies…they may taste good, but it is very unhealthy and you are at a lot higher risk of salmonella poisoning because you have to mix in raw eggs..
