I thought maybe I could make gluten free foods that taste good if the only thing that has gluten is the flour, I can just replace the flour with gluten-free flour. Has anyone tried this, like for cookie and cake recipes?

Yes, but it doesn’t work in the same way as wheat flour. Gluten is the part that makes flour “gluey” and stretchy. G-free flour (depending what it’s made from) is much more crispy for want of a better word. I find it much more difficult to make pastry with it but still fine for cakes, batters etc.
Add a little more liquid, also Xanthum gum helps. Remember it won’t behave like wheat flour. Also remember there are loads and loads of alternative foods/flours.

I’m going to be making chocolate chip cookies for my dad’s birthday on Halloween and I got mini cookie cutters in the shape of halloween stuff. I am also going to be using mini chocolate chips. Can I use any recipe to roll out if I chill the dough for a while or is there a specific recipe that is best for this?

I did that with Valentine’s cookie cutters. Just use the recipe on the back of the chocolate chips bag. The Nestle one. The cookies turned out great.

Using Liquor as flavoring in cooking?

I make a cranberry Cointreau sauce for my cheesecake at holiday time. Can I also use Cointreau as a flavoring in my sugar cookies or other such desserts? What other liquors work well to flavor cookies, cakes and such?

Frangelico would be good. It has a hazelnut flavor. I love it in coffee.

I want to make peanut butter cookies, but I don’t have any baking powder or baking soda, however I do have self raising flour. Any recipes you can give me?

Good for you making my favorite cookies!
Since the self rising flour already has baking powder and baking soda in it.
All you have to do is just measure the flour called for in the recipe and leave out the baking powder and baking soda. Look on your self rising flour bag and see if it also has salt in it. If it does leave out the salt too. If not add salt called for in the recipe.

Peanut butter cookie recipe using natural peanut butter?

I’m having a hard time online finding recipes for peanut butter cookies using natural peanut butter. So does someone out there have one?

I assume I need to adjust the sugars, but I have no clue how much as I don’t know how much icing sugar goes into peanut butter.

I’d much prefer using natural peanut butter as it’s what I have a home. If someone out there can help, please do. Thank you in advance.

Pancake recipe

Serve these pancakes with butter and syrup.
INGREDIENTS:
2 cups all-purpose flour, stirred or sifted before measuring
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, slightly beaten
1 1/2 cups milk
2 tablespoons melted butter
PREPARATION:
Sift together flour, baking powder, and salt. In a separate bowl, combine egg and milk; add to flour mixture, stirring only until smooth. Blend in melted butter. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake. Cook until brown on one side and around edge; turn and brown the other side. Recipe for pancakes serves 4.

Butterbeer Ice Cream Sandwiches
(butterscotch shortbread cookie sandwiches)

1/2 cup packed dark brown sugar
1 tablespoons butter
1/2 tablespoons vanilla
2 1/4 cups cream, divided
1 cup milk
3 egg yolks

In a small sauce pan over medium heat, stir brown sugar, butter, and vanilla until butter is melted, sugar dissolved, and the mixture is bubbling. Stir in 1/4 cup of cream and continue to stir until mixed thoroughly. Remove butterscotch mixture from heat and allow to cool.

In a stand mixer combine the egg yolks and butterscotch mixture. Beat for one minute, then mix in the milk and cream gradually.

Transfer the mixture to an ice cream maker. Allow the ice cream to churn until finished and freeze according to the manufacturer’s instructions.

Shortbread Cookies

2 cups unsalted butter, unsalted
3/4 cup powdered sugar
1 tsp. vanilla
2 1/2 cups all purpose flour

Heat the oven to 350 degrees. Mix butter powdered sugar, and vanilla in a large bowl. If the dough is too crumbly add another 2 tablespoons of butter.

Roll dough out to half an inch thick and cut into small shapes using cookie cutters, or into squares using a knife. Place the cookies one inch apart on a parchment lined baking sheet.

Bake for 14-15 minutes or until set, and the bottoms are a light golden brown. Immediately remove to a wire rack to cool completely.

To Assemble the Ice Cream Sandwiches:

Place a scoop full of ice cream on an upside down cookie. Using a second cookie press down on top of the scoop of ice cream to form a sandwich.

Place in the freezer to freeze until fully hardened. I pressed butterscotch chips into the sides of mine. Their optional but add a delightful touch of whimsy.
