Oatmeal Peanut Butter Cookies

1/2 cup shortening
1/2 cup margarine, softened
1 cup packed brown sugar
3/4 cup white sugar
1 cup peanut butter
2 eggs
1 ½ cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup quick-cooking oats

1.Preheat oven to 350ºF.

2.In a large bowl, cream together shortening, margarine, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined. Drop by teaspoonfuls onto ungreased cookie sheets.

3.Bake for 10 to 15 minutes in the preheated oven, or until just light brown. Don’t over-bake. Cool and store in an airtight container.

CRISPY OAT COOKIES

1 cup butter, softened
1 cup sugar
1 cup firmly packed brown sugar
1 egg
1 cup vegetable oil
1 teaspoon vanilla extract
3 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup regular oats, uncooked
1 cup crushed corn flakes cereal
½ cup flaked coconut
½ cup chopped pecans or walnuts

Cream butter; gradually add sugars, beating well. Add egg and beat well; add oil and vanilla, mixing well.

Combine flour, soda and salt; add to creamed mixture, mixing well. Stir in oats and remaining ingredients.

Shape dough into 1-inch balls. Place on ungreased cookie sheets and flatten each ball with tines of a fork. Bake at 325º for 15 minutes. Cool slightly; remove from cookie sheets and cool. Yield 10 dozen.

I’m making turkey cutout cookies for Thanksgiving and they’re gonna be packaged and stacked so the icing needs to be the kind that gets hard. I don’t want to use maurienge (sp) powder – I want to use powdered sugar. I’d really appreciate the help – Thanks!

Web search “splenda” cookie recipes. The texture won’t be right, A true cookie recipe is all about sugar and butter. Please note that artificial sweeteners are not really good substitutes for sugars. I know it’s probably on your wife’s list of okay foods but not a good idea because while artificial sweeteners don’t have calories, they fool your body into reacting as if it’s had sugar. And, it contributes to “sugar” cravings.

You may actually get a better result buying a “sugar free” or diabetic cookie from the health food store.

Doctors and nutritionists who stay current don’t advocate artificial sweeteners anymore unless your wife has a “lot” of weight to loose. (My doc was not one of those so I have a new one.)

Having high glucose levels is crummy. I have that too. But, I started feeling a lot better when I gave up sweets. It is not an easy thing to do. I allow myself a cheat day (usually Sunday). I make what we call the “sweet of the week,” a dessert.

Good luck to your wife. IF you haven’t visited websites for diabetics, I urge you to do that. I learned more from those folks than I did from my doctor. Not everyone who is considered borderline diabetic goes on to develop Type II diabetes.

The dessert looked like banana pudding, and then I had a bite. It was delicious. Strong lemon taste, like pudding but a bit thicker, and crumbled lemon creme cookies throughout. I would love the recipe.

Defrost a tub of whipped topping before you begin Crumble a bag of lemon creme cookies(place in bag and crush with rolling pin )but save 1/2 cup & put aside, mix the crumbles with 1 stick of melted butter or margarine.. spray a 9×13 pan with cooking spray then pat crumbles into bottom of pan.bake 10 minutes at 350 degrees set aside & cool completely Take 2 packages cream cheese(8 oz each) and 2 cups powdered sugar and beat together set aside mix 3 packages lemon instant pudding with 5 cups milk fold into the cream cheese mixture now fold in a ( 8 to 12 0z)tub of whipped topping spread gently over the cooled crust you can mix crumbles in cream mixture or use to decorate the top refrigerate at least 4 hours before serving
