You know the kind I’m talking about. The elusive sugar cookie that literally tastes like big crumbles of sugar. This is not the kind of cookie you would frost or decorate for christmas. I’ve tried several recipes for sugar cookies, and they are all too doughy or flour-y – not the recipe I’m looking for!

Best cookie recipe I’ve found is on the back of the Betty Crocker’s “Funfetti” cake mix box. Very simple recipe, only have to add oil, & an egg. No frosting needed, but sometimes I do frost them with the “Funfetti” Betty Crocker frosting. I roll them into balls, & smash down a little with a fork. Really good!

I brought some cookies already mix dough from Wal-mart. I follow the instructions well. After I let the cookies cool down it was hard as a brick. So can someone give me some pointers in how to keep the cookies soft?

1. Dont over bake them. Even if they look soft, the sugar in the cookie keeps baking after you take them out.
So take them out after the correct time and cool them on a wire rack. Store them in a tupperware container (or any plastic container with a good tight lid) with a slice of regular bread. Swear to god it works! My grandma taught me this!

I used to cry for it when I was little.I wouldn’t let them polish my teeth with anything else and now the dentist doesn’t have it anymore:(

Usually, the chocolate and pink cookies have white sugar and the white cookies have pink sugar.
They’re soft and melt in your mouth.

I do know alcohol is on the list of bad things but I don’t drink alcohol, coffee or pop.
Please no links just share what you’ve had to give up or what someone you know has given up. Because of being pre diabetic.
I can do research but I would rather hear from those that have been where I am.

Foods that are high in sugars, and carbohydrates are things that should be avoided. Candies, pastas, and fatty foods are some examples. Nothing needs to be entirely given up, but rather used in more moderation than a non-Diabetic.

I have had Type 1 for 24 years, and have adjusted to only eating things like pasta and desserts on rare occasions, and in small amounts at that.

My thought is that they are sugar cookies covered with white chocolate, So how would you cover the cookies with the white chocolate without making a huge mess?

Those are pretty much shortbread cookies with a lot of frosting!!

Try this shortbread recipe and add whatever you want to them! They are super easy and yummy!!

NGREDIENTS:

* 8 ounces butter (2 sticks), room temperature
* 1/2 cup confectioners’ sugar
* 2 cups all-purpose flour
* 1/2 teaspoon baking powder
* 1/2 teaspoon vanilla extract

PREPARATION:
Combine all ingredients; use hands to knead until ingredients are blended. Press into ungreased pans (or chill and roll out to about 1/2-inch on a floured board and cut into shapes). Bake at 325° for about 20 minutes, or until lightly browned.
Cut into wedges while warm or break apart.

Cut in whatever shape before baking and melt white chocolate and dip and let dry…its really not that messy!!!
