I am going to be making this recipe http://www.food.com/recipe/lemon-cookie-tarts-215530 for mini tarts. Some will be lemon others will be a ganache filling.

I have a box of jello cook and serve lemon flavor, I only plan to fill 10 of the mini cookie cups with the recipe for lemon pie filling which is on the back of the box, this filing would normally go in a 9 inch pan to make 8 servings. The box of jello is 2.9 oz. The recipe for the filling is as follows:
Stir pudding mix, 1/2 cup sugar, 1/4 cup water and 2 beaten egg yolks in medium saucepan. Stir in 2 cups water. Stirring constantly with wire whisk, cook on medium heat until mixture comes to a full boil on medium heat. Cool 5 minutes stirring twice. Serve warm or chilled.

Will this filling be enough to fill the 10 mini cookie cups, if there is leftover filling how much will be left over, can I freeze it and for how long? Or how long will it stay in the fridge for?

Your cookie tart recipe will make 30 cookie tarts but only calls for 1/2 cup of lemon curd, which really doesn’t sound like enough to me for all 30 tarts. However, your lemon curd Jello pudding recipe should make about 2 cups of lemon curd. That 1/2 cup of lemon curd in the actual recipe should certainly fill 10 tarts. Cool the curd to about room temperature, before filling your cookie tarts.

The Jello lemon curd will serve 8 when used as a filling for a 9 inch pie crust, meaning that you should get 8 slices from the pie. You cannot freeze the curd and should have about 1 1/2 cups leftover if you only plan to fill 10 cookie tarts with it. Just put the lemon curd into dessert dishes and serve it with whipped cream. You can also cut a store bought pound cake loaf in half the long way and use the leftover curd as filling. Wrap the cake well in aluminim foil and store in the fridge for 3-4 days.

6 cookies=1 carb and 3 fats exchange??

Does it mean that 6 cookies only have 1 effective carb?

15 grams of carbs are considered to be 1 serving. 6 cookies would have 15 net carbs (maybe not exactly 15 but close).

I have a family recipe for Italian egg cookies that everyone raves about. I would like to start a business with this one recipe for now, and then gradually expand to other items. My mother says it’s not a good idea because she says it’s something anyone can do, that it’s too easy to imitate. I’m lacking in confidence as it is, and, sure, anyone can do it, but it’s a better recipe than what’s currently available retail. Please share your thoughts. Thanks in advance.

I think family recipe is good, first check out there and do some survey about home cookies, after survey you will know the sales potentials, from that point you can start leveraging and calculate the business, but you must research your market first an honest one.
