Recipe: Date Orange Cookie Bars


FILLING:

1/2 c. dates, cut up
1 c. water
1/2 c. sugar
2 tbsp. flour
1 lb. 2 oz. pkg. orange slices, cut lengthwise in 3″ slices

Heat dates and water until soft. Mix sugar and flour and add to date mixture.

DOUGH:

3/4 c. shortening
1 c. brown sugar
1 tsp. soda
2 tbsp. water
1 3/4 c. flour
1 tsp. vanilla
1/2 tsp. salt
1/2 c. chopped nuts

Spread half of dough in 9″x13″ pan. Cover with orange slices, spread date mixture over that. Put rest of dough on top (be careful not to get date mixture on top). Bake at 350 degrees for 40 minutes. Cool and cut into bars.

2 cups all-purpose flour
1/2 cup heavy cream
1/2 cup butter
1/4 teaspoon orange flavoring
2 drops orange food coloring
powdered sugar for dusting board

–FILLING–
3/4 cup powdered sugar
1/4 cup butter
1 teaspoon orange extract
2 drops orange food dye
1/4 teaspoon heavy cream

Preheat oven to 400°F.

Cream butter. Add flour. Stir in cream and orange flavoring, mix well, until dough holds together. Place dough on a board lightly dusted powdered sugar. Roll out dough.

Using 1-1/2 to 2 inch round cookie cutter, cut out dough and place on ungreased cookie sheet about 2 inches apart.

Bake 8-9 minutes. Remove to a wire rack to cool completely.

Combine all the filling ingredients. Add more sugar or cream to make the filling spreadable.

Once cool, top one cookie with some orange cream and top with another cookie.

Diabetic Recipe: Orange Cookies


1 medium orange
1/2 cup shortening
2 Tbsp granulated sugar replacement or granulated fructose
1 egg
2 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup buttermilk

Juice and grate the rind of the orange; remove seeds from the juice. Cream together shortening and sugar replacement. Add egg, orange juice and grated orange rind, beating until light and fluffy. Combine flour, baking powder, baking soda and salt in sifter, and add alternately with buttermilk to creamed mixture. Stir to blend. Drop by teaspoonfuls onto lightly greased cookie sheets, 2 to 3 in. (5 to 7 cm) apart. Bake at 375 degrees F (190 C) for 10 to 12 minutes.

Exchange 1 cookie with sugar replacement: 1/3 fruit
1/3 fat Calories 1 cookie with sugar replacement: 27

Exchange 1 cookie with fructose: 1/3 fruit
1/3 fat Calories 1 cookie with fructose: 30
