I would like to make flat and chewy chocolate chip cookies using sugar free chocolate chips, Splenda, and Splenda brown sugar blend . I followed the recipe on the Hershey’s sugar free chocolate chips, but they turned out thick and cake-like. I know that a ratio of more brown sugar to white sugar is how to do it with real sugar, but I’m not sure how the Splenda sweetener works when baking. Thanks for your help!

My cookies look fine during the baking cycle, but as they cool they become flat like pancakes. Why is this happening?
I’m using baking soda and no baking powder. Do I need to refrigerate my baking soda?

An extra thanks to former baker. I will mix longer and reduce some of the chocolate chips.

i wanna make chinese almond cookies that is not flaky, not gooey or fudgy. when you bake it , it will melt and spread so it will form a very flat cookies, yet hard.
which ingrendients i should use, be more or be less?

egg yolk
egg white
lard/margarine/butter/applesauce

actually i prefer margarine/applesauce becoz im not really into milk.

advice, please …thanks!

PS: i dont want it greasy too. i prefer it dry . When you put the cookies on a paper it doesnt form that oily island

I use Bob’s Red Mill Gluten Free All Purpose Baking Mix for most baked goods. However, my cookies come how as flat and hard as peanut brittle. Any advise? Thanks!

I’m afraid you can’t, as it is the gluten that provides the cookie with its internal molecular structure.
