Recipe: Banana Chip Cookies

3/4 cup shortening
1 cup sugar
2 eggs
1/2 cup milk
1/4 cup honey
1 medium ripe banana, mashed
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup miniature semisweet chocolate chips

In a mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Beat in milk, honey and banana. Combine flour, baking powder and salt; gradually add to the creamed mixture. Stir in chocolate chips.

Drop by heaping teaspoonfuls 2 in. apart onto lightly greased baking sheets. Flatten with a glass dipped in sugar.

Bake at 350 for 10-12 minutes or until edges are lightly browned. Remove to wire racks to cool.

Yield: 5 dozen.

1/2 cup shortening
1/2 cup margarine or butter (note: do not use diet margarine)
2-1/2 cups all-purpose flour
1 cup packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla
1/2 tsp. baking soda
1 cup semisweet chocolate pieces
1 cup chopped white chocolate baking squares
1 3-1/2-oz. jar macadamia nuts, chopped

In a mixing bowl beat the shortening and margarine or butter with an electric mixer on medium to high speed for 30 seconds. Add about half of the flour, the brown sugar, granulated sugar, eggs, vanilla, and baking soda. Beat mixture till thoroughly combined. Beat in the remaining flour. Stir in chopped white chocolate, semi-sweet chocolate pieces, and chopped macadamia nuts. Drop the dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet.

Bake in a 375 degree F. oven for 8 to 10 minutes or till edges are light brown. Cool cookies on a wire rack. Makes about 60 cookies.

1 1/2 cups finely crushed graham cracker crumbs
1/2 cup all purpose flour
2 t. baking powder
1 (14 oz.) can of sweetened condensed milk
1/2 cup butter or margarine, softened
1 1/3 cups of flaked coconut
1 (12 oz.) package semi-sweet chocolate chips

Preparation:

Heat oven to 375*. In bowl, mix graham cracker crumbs, flour, and baking powder. In mixer bowl, beat sweetened condensed milk and butter well. Add dry ingredients and mix well.

Stir in coconut and chocolate chips. Drop by Tablespoons onto lightly greased cookie sheets. Bake 9 to 10 minutes or until lightly browned. Cool 2 to 3 minutes, then remove from cookie sheets.

1 1/2 sticks (3/4 C) butter, softened
1/3 C sugar
1 tsp. almond extract 1 C flour
6 oz. semisweet chocolate chips (about 1 C)
4 oz. slivered almonds (about 1 C)

Preheat oven to 350 degrees. Cream butter and sugar together in a med. bowl using an electric mixer set at med. speed. Add extracts and beat well. Scrape bowl. Add flour, chocolate chips, and almonds, and blend on low speed just until combined.

Do not over mix.

Shape rounded tablespoons into 1 1/2 inch balls and place on ungreased baking sheets, 2 inches apart. Press balls with palm of hand or bottom of drinking glass to 1/2 inch thick rounds. Bake 15 to 17 minutes or until cookies just begin to brown. Transfer cookies to a cool, flat surface.

2 cups quick-cooking oats
3/4 cup all-purpose flour
1 14-oz can Eagle Creamy Chocolate Sweetened Condensed Milk (NOT evaporated milk)
1/2 cup margarine or butter, melted
1 12-oz package semi-sweet chocolate chips

Preheat oven to 357°. In bowl, mix oats, and flour. In mixer bowl, beat sweetened condensed milk and margarine until smooth. Add oat mixture; mix well. Stir in chocolate chips. Drop by rounded tablespoons onto greased cookie sheets. Bake 9 -10 minutes or until set. Cool 2 – 3 minutes; remove from cookie sheets. Garnish as desired. Store covered at room temperature.

1 cup shortening
2 cups packed brown sugar
2 eggs
1 cup boiling water
2 T instant coffee granules
4 cups all-purpose flour
2 t baking powder
1 t baking soda
4 cups (24 ounces) semisweet chocolate chips

In a mixing bowl, cream shortening and brown sugar. Add eggs, one at a time, beating well after each addition. Combine water and coffee; set aside. Combine the flour, baking powder and baking soda; add to creamed mixture alternately with coffee. Stir in the chocolate chips. Refrigerate for 1 hour. Drop dough by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350 for 10-12 minutes or until golden around the edges. Remove to wire racks.

Yield: 3-1/2 dozen.
