Last weekend we made Halloween sugar cookies, this weekend more of those plus we are trying to make an eclair cake consisting of a layer of vanilla cake, layer of vanilla pudding, another layer of vanilla cake topped with chocolate icing….mmmmm…..the kids are looking forward to this.

Halloween Cookies
Ingredients
1 pkg. chocolate cake mix
1 cup crunchy peanut butter
1/3 cup water
2 large eggs

Toppings:
granulated sugar small candy coated chocolate candies
red hots candy

Hardware
Large bowl
Cookie sheets
Mixer
1 1/2-inch drinking glass

Step 1: Preheat oven to 375 degrees F.
Step 2: In a large bowl, beat together peanut butter, eggs, and water.
Step 3: Gradually add cake mix, stir well.
Note: The key to working with this dough is to keep your hands and utensils slightly wet.
Step 4: Form dough into 1-inch balls. Place on ungreased cookie sheet.
Step 5: Dip bottom of drinking glass into granulated sugar and flatten each ball.
Step 6: Pushing dough up and around top of cookie form two ears on each cookie.
Step 7: Add small chocolate candies for eyes, and red hots for nose.
Step 8: With the side of a fork or the edge of a butter knife form 3 whisker lines from each side of the red hot (nose).
Step 9: Bake 9-11 minutes, then pull from oven. Let set for 1-2 minutes before transferring to cooling surface.

Makes about 44 cookies.

Christmas Cookies
Chocolate Toffee Bars

Ingredients:

2 cups vanilla wafer crumbs
1/4 cup packed brown sugar
1/2 cup butter, melted

Topping ingredients:

1/2 cup butter
1/2 cup packed brown sugar
1 cup semisweet chocolate chips
1/2 cup finely chopped pecans

Directions:

1. Combine crumbs, brown sugar and butter. Press into an ungreased 13-in. x 9-in. x 2-in. baking pan.

2. Bake at 350 degrees F for 8-10 minutes or until lightly browned.

3. In a saucepan, bring butter and brown sugar to a boil over medium heat; boil and stir for 1 minute. Pour evenly over crust.

4. Bake at 350 degrees F for 10 minutes. Remove from oven; let stand for 2 minutes.

5. Sprinkle with chocolate chips; let stand until chocolate is melted. Spread evenly over top; sprinkle with pecans. Cool completely before cutting.

I am using archway cookies with a letter ‘C’ on them for my wedding favors. The cookies are dark so I want to use a stencil to put powered sugar on. What type of stencil should I use? How should I get the sugar to stick? Is there a spray that I can put over it to get it to stay in place after it is on?

there is a spray icing sort of thing you can buy in the baking aisle in the grocery store or craft store. you can get your stencils at the craft store as well.

I want to bake cookies as gifts for Christmas. Can I bake them now and then place in a zip lock bag and freeze. Then take them out and will they be fresh and safe for consumption?

i would freeze the dough..then bake them closer to the day…the frozen baked cookies will not be as fresh or good!

Wait till they’re cooled and wrap in saran wrap then pop inside a zip lock bag and they will last 6 months. Keeping the air out is key!
