Recipe suggestions for muffins or cookies?

Question by Kai’s Mama: Recipe suggestions for muffins or cookies?
I would like to make some muffins/bread/breakfasty thing today, as well as some cookies/bars/lunchbox dessert. Two different recipes. I am an experienced baker, and have a fully stocked dry goods pantry… BUT, I am out of eggs. Anyone have favorite recipe suggestions? As for flavors, I have a can of raspberry filling, some canned pears, cream cheese, oats, some choc chips, peanut butter, applesauce….. (just no eggs). What should I try? Thanks, everyone!

You don’t need eggs for these recipes.

NO EGG OATMEAL COOKIES
1 c. butter
1/2 c. sugar
1/2 tsp. vanilla or lemon extract
1 1/2 c. oats
1 c. flour
1/2 tsp. baking soda

Roll into balls; flatten with fork. bake at 375 degrees for 10 or 12 minutes; sprinkle with powdered sugar.

NO EGG COFFEE CAKE
3 c. flour
2 c. sugar
3/4 c. shortening
1/2 tsp. each cloves, cinnamon and nutmeg

Mix above ingredients and set aside 1/2 cup for topping. Mix 2 cups buttermilk, 2 teaspoons baking soda and 1 teaspoon salt. Add to first mixture. Sprinkle topping over pan. Bake at 350 degrees for 45 minutes.

    Honey Gingerbread Men

    Ingredients
    1/2 cup granulated sugar
    3 cup flour, sifted
    2 tsp. baking soda
    1/4 tsp. salt
    2 tsp. powdered ginger
    2 tsp. ground cinnamon
    1/2 tsp. ground cloves
    1/2 tsp. ground nutmeg
    1/2 lb. butter
    1/2 cup honey

    Preparation Instructions
    In a large mixing bowl, measure and sift together all the ingredients except for the butter and honey.
    Cut the butter into the flour mixture until mixture resembles crumbs. Add honey and stir until well blended.
    Cover and refrigerate at least one hour.
    Preheat oven to 350 degrees.
    On a floured surface, or between two sheets of waxed paper, roll the dough out about 1/8-inch thick. Cut into gingerbread men shapes.
    Place cookies on a cookie sheet and bake 12-15 minutes, or until dough is set.
    Remove from oven and allow to cool for about one minute before removing them from the cookie sheet and transferring to a cake rack to cool completely.
    When cooled, ice and decorate as desired.
