    3 cups rolled oats

    Preparation Instructions
In a large mixing bowl, blend the rolled oats and flaked coconut.
In a saucepan, mix the butter, sugar, milk, and cocoa. Stir over medium heat, bringing to a boil.

    Boil for exactly 2 minutes.

Remove from stove and pour into the bowl with the dry mixture.

Stir well and place spoon-sized portions on a cookie sheet covered with waxed paper.

Google up the recipe for Whoopie Pies, a famous Pennsylvania Dutch treat, and you’ll find a good chocolate sandwich cookie. Softer than the wafer-type, more like a thin cake. You can make them any size you want from Oreo size on up to pancake size – the Penn. Dutch put fluffy white frosting between two of them, they would work fine with ice cream. They are durable enuf to be a favorite lunchbox treat for the kids & daddies – so try them for your ice cream sandwiches.
