Recipe: More Chinese Fortune Cookies

Ingredients:
2 Eggs
1/2 Cup Powdered Sugar
4 Tablespoons Water
1/2 Teaspoon Almond Flavoring
1 Cup Cake Flour, sifted

Butter a baking sheet & dust it lightly with flour. Heat oven to 350 degrees. Beat eggs & gradually mix in sugar while beating until mixture is very thick. Beat water in a tablespoon at a time. Add & beat in the almond flavoring, preferably with an electric mixer, as it must be thorough. Very gently fold in the flour to mix, but do not beat. Drop the batter by level tablespoonfuls on the buttered sheet 5 inches apart. Bake until very lightly browned. Remove from oven and shape while still quite warm, inserting fortunes. Let cool in glasses to hold the form.

Recipe: Chocolate Oatmeal Treasure Cookies


2 cups quick-cooking oats
3/4 cup all-purpose flour
1 14-oz can Eagle Creamy Chocolate Sweetened Condensed Milk (NOT evaporated milk)
1/2 cup margarine or butter, melted
1 12-oz package semi-sweet chocolate chips

Preheat oven to 357°. In bowl, mix oats, and flour. In mixer bowl, beat sweetened condensed milk and margarine until smooth. Add oat mixture; mix well. Stir in chocolate chips. Drop by rounded tablespoons onto greased cookie sheets. Bake 9 -10 minutes or until set. Cool 2 – 3 minutes; remove from cookie sheets. Garnish as desired. Store covered at room temperature.

Recipe: Cocoa Cookie Hearts

Recipe: Cocoa Cookie Hearts


½ cup (1 stick) butter or margarine, softened
1 cup sugar
2 eggs
2 cups all-purpose flour
1/2 cup HERSHEY’S Cocoa
1 t baking powder
½ t baking soda
½ t salt

In large mixer bowl, beat butter, sugar and eggs until light and fluffy. Stir together flour, cocoa, baking powder, baking soda and salt; gradually add to butter mixture, beating until blended. Cover; refrigerate dough until firm enough to handle. Heat oven to 350 F. On lightly floured surface, roll dough to 1/8-inch thickness; cut with heart-shaped cookie cutter. Place on ungreased cookie sheet. Bake 5 to 7 min, or until no print remains when cookies are touched lightly in center. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely. Prepare Valentine Frosting; spread onto cookies. Decorate as desired. About 4 dozen cookies

Valentine Frosting

1½ cups powdered sugar
2 T butter, margarine or shortening
2 T milk
½ t vanilla extract

In small bowl, beat powdered sugar butter milk and vanilla until smooth and of spreading consistency. Add additional milk, 1 tsp at a time, if needed. Pink Valentine Frosting: Stir in 2 to 3 drops red food color, tinting as desired. Chocolate Valentine Frosting: Stir 3 T HERSHEY’S Cocoa into powdered sugar. Proceed as directed above, increasing milk to 3 T.

Recipe: Best Sugar Cookies


1 cup butter
3/4 oil
3/4 sugar
1 cup powdered sugar
2 eggs
2 teaspoons vanilla extract
41/2 cups flour
1 teaspoon soda
1/2 teaspoon salt
1 teaspoon cream of tartar

Powdered Sugar Icing:
2 tablespoons butter, softened
4 cups powdered sugar, sifted
1/2 to 2/3 cup milk
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract

Cookie: Beat butter and oil together. Gradually add sugars, beating well. Add eggs and vanilla. Mix well. Combine flour, soda, salt and cream of tartar. Gradually add to butter mixture and mix well.

Refrigerate for several hours. Roll out gently on lightly floured surface with lightly floured rolling pin to about 1/4-inch thickness. Use any type of cookie cutter. Bake at 375 F for 10 minutes or until edges are barely brown. Don’t over bake. This entire recipe can be done by hand or with a mixer.

Makes 3 dozen.

Recipe: Sour Lemon Cookies

Recipe: Sour Lemon Cookies


1/2 c. butter or margarine
1/4 c. sugar and sugar substitute to
equal 1/4 c.
1 egg
1 tbsp. water
1 tbsp. fresh lemon juice
1 tbsp. grated lemon peel
1 tsp. vanilla
1/2 c. shredded dry coconut
2 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt

Cream butter or margarine in small mixing bowl with high speed of mixer. Add sugar, sugar substitute, egg, water, lemon juice, lemon peel and vanilla. Beat mixture until thoroughly blended. Mix in coconut. Sift four and baking powder and salt and add this to creamed mixture well. Form dough into a roll 2 inches in diameter. Wrap in waxed paper. Chill until firm. Cut into thin slices. Place slices on ungreased cookie sheet. Bake at 400 degrees for 10 to 15 minutes. Makes 4 1/2 dozen.

Recipe: Buttery Yeast Spritz Cookies


1 package active dry yeast (1/4-ounce)
2 tablespoons warm water (110-115-degrees)
1 cup sugar
2 cups butter (no substitutes) — softened
2 egg yolks
4 cups all-purpose flour

In a bowl, dissolve yeast in water; set aside. In a mixing bowl, cream butter and sugar.
Beat in egg yolks and yeast mixture. Gradually add flour. Using a cookie press fitted with disk of your choice, press dough into desired shapes 1-inch apart onto ungreased baking sheets. Bake at 400 F. for 7-9 minutes or until lightly browned. Remove to wire racks to cool.

Yields: 13 dozen.

These sound weird but you will be surprised at how wonderful these cookies are. I made them and took them to Alabama with me to a mini family reunion type thing and everyone turned their noses up at them. Finally Jerry’s brother ate one and RAVED about it. Everyone else started eating them and they were all gone in a few minutes and I took over 5 dozen of them. In fact we made more while I was there too. I carry my laptop with me so we had the recipe there and we printed out zillions of copies for it. I then made these for my neighbors graduation party (she calls me Neighborhood Nanna:) ) and everyone loved them and I had to give out recipes for it there too. So try them. They are wonderful!!!! Bet you can’t eat just ONE!!!!!!

Lemon Basil Cookies

1/4 c butter (no substitution)
1 (8 oz) pkg cream cheese
1 egg yolk
1 tsp lemon juice
1/2 tsp grated lemon peel
1 box lemon cake mix
1-1/4 cup currants or 1 cup raisins
1/4 cup shredded coconut
1/4 cup chopped walnuts
2 Tablespoons basil or 1 Tablespoon dried basil

Preheat oven to 350 degrees.

Line cookie sheets with parchment paper.
Cream butter, cheese, egg yolk, lemon juice and peel until well blended and fluffy. Blend in cake mix one third at a time and mixing the last 1/3 in by hand. Stir in remaining ingredients. Drop by level teaspoons onto greased baking sheet. Bake in preheated oven at 350 for 15 to 18 minutes until LIGHTLY browned. Let cool before removing from cookie sheet.

*NOTE: If you use parchment paper.. just slide it off the cookie sheet and let them cool on that. That way you can use the cookie sheet again.

Recipe: Gluten-Free Chocolate Chip Cookies

Recipe: Gluten-Free Chocolate Chip Cookies

Ingredients:

3/4 cup  Soya flour
1/4 cup Potato starch flour
1/2 tsp Salt
6 1/2 tbl. Margarine
6 tbl. White sugar
6 tbl. Brown sugar
1/2 tsp Vanilla
1 Egg
1/2 cup semi-sweet chocolate chips
1/2 cup Chopped nuts

Directions:

 This is a special recipe made without gluten. Sift dry ingredients.  Beat sugars and margarine.  Add egg and beat again. Add vanilla and stir.  Add dry ingredients.  Add chips and nuts.  Drop by spoonful onto greased cookie sheet.  Bake at 375 F for 10 to 12 minutes.

Recipe: Chai Butter Cookies

Recipe: Chai Butter Cookies


1 1/2 cups all-purpose flour
3/4 tsp baking powder
1/4 tsp salt
1/2 cup plus 1 tbsp sugar
1 stick unsalted butter, softened
1/2 of a large egg, slightly beaten 1 1/2 tbsp cream
1/2 tsp vanilla extract
1/4 tsp cardamom
1/2 tsp cinnamon
1/8 tsp clove

Mix together the flour, baking powder, salt, and 1/2 cup sugar. Cut butter into flour mixture. Add egg, cream and vanilla. Blend thoroughly. Dough may be chilled.

Preheat oven to 400º. Roll dough out on a flour surface to 1/2 thickness.

Cut into 1 inch round cookies. Mix 1 tbsp sugar with cardamom, cinnamon and ground clove. Sprinkle over the top.

Bake for 5 to 8 minutes.

Recipe: Apple Butter Refrigerator Cookies

Recipe: Apple Butter Refrigerator Cookies


1 cup sugar
1 cup butter/margarine, softened
1/4 cup apple butter
1 egg
2 1/2 cup all-purpose flour
1 cup cheddar cheese, shredded
1/2 t baking soda
1/2 t apple pie spice

Mix sugar, butter, apple butter and egg. Stir in remaining ingredients. Cover and refrigerate at least 2 hours. Divide dough in half. Shape each half into roll, about 1 1/2
inches in diameter and out 8 inches long.

Wrap and refrigerate at least 4 hours. Heat oven to 400 degrees. Cut rolls into 1/8-inch slices. place about 1 inch apart on ungreased cookie sheet. Bake 7 to 9 minutes or until edges are light brown; cool.

Makes about 6 dozen cookies; 55 calories per cookie.
