Question by stubadingdong: Oatmeal to flour ratio for cookies?
I have an awesome chocolate chip cookie recipe that I want to convert to oatmeal cookies. I don’t know how much flour to nix in favor of oatmeal (and unprocessed bran, for that matter).

The recipe calls for 2 1/4 cups flour. Any bakers have suggestions for conversion?

I would grind the oatmeal to a flour and then put in 1 3/4 cups and add more if needed. The oatmeal absorbs more moisture than the standard white flour so you have to be careful.

First, I would go with a 2:1 ratio brown:white sugar (ex. 1 cup brown:1/2 cup white). I would go 1 1/2 cups flour and 3 cups oats. Oatmeal cookies definitely need cinnamon too!
