1 cup butter, softened
1/2 cup confectioners’ sugar
1/4 cup cornstarch
1 1/2 cups all-purpose flour

Preheat the oven to 375 degrees F (190 degrees C).
Whip butter with an electric mixer until fluffy. Stir in the confectioners’ sugar, cornstarch, and flour. Beat on low for one minute, then on high for 3 to 4 minutes. Drop cookies by spoonfuls 2 inches apart on an ungreased cookie sheet.
Bake for 12 to 15 minutes in the preheated oven. Watch that the edges don’t brown too much. Cool on wire racks.

    Cream butter and sugar thoroughly. Add flour gradually, one cup at a time. Mix this until well blended, but do not overmix. Roll into one-inch balls, and place on ungreased cookie sheet. Stamp with warm cookie stamp. Bake at 325 d F for 15 to 20 minutes.

    4+1/2 cups all-purpose flour
    1 cup hazelnuts or walnuts, ground fine
    2 cups vegetable shortening (you can also use margarine or butter)
    2+1/2 cups light brown sugar
    2 teaspoons vanilla extract

    Preheat oven to 350 degrees. Cream shortening and sugar in a large bowl. Beat in vanilla extract. Gradually blend in flour and nuts. Pinch off walnut-sized pieces of dough and roll into balls. Place 1+1/2 inches apart on ungreased (or very lightly greased–I recommend Pam nonstick spray) baking sheets. Flatten with the bottom of a glass dipped in flour. Bake for 10 to 15 minutes, until lightly browned.

    Scottish Shortbread:
    250gms butter(don’t use substitute, it must be butter)
    2/3 rds cup caster sugar
    1 & 2/3rd cups plain flour
    1/2 cup rice flour.
    preheat oven to 160c.Brush a round pizza tray with melted butter. line with baking paper.
    using electric beaters, beat sugar & butter in small bowl until light & creamy.Transfer to larger bowl; addsifted flours.Using a flat bladed knife mix to a soft dough.Turn out onto a floured board. Knead for 30 seconds or till onto prepared tray, & shape into a 25cm round. Pinch & flute the edges decoratively with your fingers.Mark into 16 segmebts & prick surface lightly with a fork. Sprinkle with crystal sugar & bake for 35 mins on middle shelf till firm & lightly golden.The tray used for cooking must be larger than the shortbread round, as the mixture will spread during cooking.
