This is from 3Fat Chicks on a Diet. I’ve made them and they’re very good.

Brownie Cookies

3/4 cup reduced calorie margarine, softened
2/3 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup egg substitute
1 3/4 cup all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup unsweetened cocoa
3/4 cup miniature chocolate chips

recipe directions
Beat margarine at medium speed of an electric mixer until creamy; gradually add sugars, beating well. Add egg substitute, 1/4 cup at a time, beating well after each addition.

Combine flour, baking soda, salt and cocoa. Add to margarine mixture, stirring just until blended. Stir in miniature chocolate chips. Drop cookie dough by level tablespoonfuls, 2 inches apart, onto an ungreased cookie sheet. Bake at 375*F for 6 minutes. Remove from cookie sheets and let cool on wire racks.

Serves: 48

Generally if you remove fat from a dessert recipe, you have to put something back in to replace the fat. And most of the time, depending on what you are making – or baking – it’s either pureed prunes, mashed bananas or applesauce.

If you don’t have bananas or applesauce, the best low-fat dessert is making an Angel Food cake. It doesn’t have any fat in it – egg whites – no yolks – no cholesterol or very very low-cholesterol. You can serve Angelfood cake with any kind of fruit and a little cool whip.

If you don’t have Angel Food cake, then your next bet would be this one:

1 box chocolate cake mix (even though the box shows that you add other things like water and eggs – don’t – you don’t need it for this recipe)
1 small box chocolate or coconut cream Heat & Serve pudding (must be Heat & Serve – you must cook it)
1 3/4 c milk (or whatever is called for on the box – you can use nonfat milk)
    1/2 c chopped pecans
    1/2 c mini chocolate morsels

Place the dry cake mix in a bowl. Set aside. Place the milk and pudding mix in a pan, bring to the full boil like the box says. Once you’ve done what the box says, pour it immediately into the dry cake mix and stir. Pour that into a sprayed 8″ square cake pan. Sprinkle the chocolate mini morsels over the cake mix and sprinkle the pecans over the chocolate. Bake in a preheated 350º oven for 25-30 minutes or until a toothpick stuck in the middle comes out clean (some of the chocolate morsels might stick to the toothpick – don’t count that as the cake not done).

The chocolate and nuts are the frosting.
