Halloween Cookies
Ingredients
1 pkg. chocolate cake mix
1 cup crunchy peanut butter
1/3 cup water
2 large eggs

Toppings:
granulated sugar small candy coated chocolate candies
red hots candy

Hardware
Large bowl
Cookie sheets
Mixer
1 1/2-inch drinking glass

Step 1: Preheat oven to 375 degrees F.
Step 2: In a large bowl, beat together peanut butter, eggs, and water.
Step 3: Gradually add cake mix, stir well.
Note: The key to working with this dough is to keep your hands and utensils slightly wet.
Step 4: Form dough into 1-inch balls. Place on ungreased cookie sheet.
Step 5: Dip bottom of drinking glass into granulated sugar and flatten each ball.
Step 6: Pushing dough up and around top of cookie form two ears on each cookie.
Step 7: Add small chocolate candies for eyes, and red hots for nose.
Step 8: With the side of a fork or the edge of a butter knife form 3 whisker lines from each side of the red hot (nose).
Step 9: Bake 9-11 minutes, then pull from oven. Let set for 1-2 minutes before transferring to cooling surface.

Makes about 44 cookies.

Christmas Cookies
Chocolate Toffee Bars

Ingredients:

2 cups vanilla wafer crumbs
1/4 cup packed brown sugar
1/2 cup butter, melted

Topping ingredients:

1/2 cup butter
1/2 cup packed brown sugar
1 cup semisweet chocolate chips
1/2 cup finely chopped pecans

Directions:

1. Combine crumbs, brown sugar and butter. Press into an ungreased 13-in. x 9-in. x 2-in. baking pan.

2. Bake at 350 degrees F for 8-10 minutes or until lightly browned.

3. In a saucepan, bring butter and brown sugar to a boil over medium heat; boil and stir for 1 minute. Pour evenly over crust.

4. Bake at 350 degrees F for 10 minutes. Remove from oven; let stand for 2 minutes.

5. Sprinkle with chocolate chips; let stand until chocolate is melted. Spread evenly over top; sprinkle with pecans. Cool completely before cutting.

    1/4 cup powdered sugar (to sprinkle on towel)
    3/4 cup all-purpose flour
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground cloves
    1/4 teaspoon salt
    3 large eggs
    1 cup granulated sugar
    2/3 cup LIBBY’S® 100% Pure Pumpkin
    1 cup walnuts, chopped (optional)
    1 (8 ounce) package cream cheese, softened
    1 cup powdered sugar, sifted
    6 tablespoons butter or margarine, softened
    1 teaspoon vanilla extract
    1/4 cup powdered sugar (optional)
    Directions
    1.PREHEAT oven to 375 degrees F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle towel with powdered sugar.
    2.COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.
    3.BAKE for 13 to 15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.
    4.BEAT cream cheese, powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.
