Question by : How do I keep my Gluten Free cookies from turning out flat and hard?
I use Bob’s Red Mill Gluten Free All Purpose Baking Mix for most baked goods. However, my cookies come how as flat and hard as peanut brittle. Any advise? Thanks!

I’m afraid you can’t, as it is the gluten that provides the cookie with its internal molecular structure.
