hi.I’m yasmin.I want to bake some butter cookies for this weekend.I want to decorate it with straw berry jam.i need som ideas to bake.

    I like to sprinkle mine with colored sugar before I bake them. Some folks put on icing. My son and husband love them.

    Butter Cookies

    INGREDIENTS
    1 cup butter or margarine, softened
    3/4 cup sugar
    1 egg
    1/2 teaspoon vanilla extract
    2 1/2 cups all-purpose flour
    1 teaspoon baking powder
    1/4 teaspoon salt
    FROSTING:
    1/2 cup butter or margarine, softened
    4 cups confectioners’ sugar
    1 teaspoon vanilla extract
    3 tablespoons milk
    red food coloring

    DIRECTIONS
    In a mixing bowl, cream butter and sugar. Add egg and vanilla; mix well. Combine flour, baking powder and salt; add to creamed mixture and mix well.
    Place the dough in a cookie press fitted with a heart plate; form cookies on ungreased baking sheets. Bake at 375 degrees F for 6-8 minutes or until set but not brown. Cool on wire racks.
    Beat butter, sugar and vanilla until smooth. Blend in enough milk until desired spreading consistency is reached. Add food coloring to a portion or all of the frosting if desired. Frost cookies.

    INGREDIENTS
    1 3/4 cups all-purpose flour
    1/2 teaspoon salt
    1 teaspoon baking soda
    1/2 cup butter, softened
    1/2 cup white sugar
    1/2 cup peanut butter
    1/2 cup packed brown sugar
    1 egg, beaten
    1 teaspoon vanilla extract
    2 tablespoons milk
    40 miniature chocolate covered peanut butter cups, unwrapped

    DIRECTIONS
    Preheat oven to 375 degrees F (190 degrees C).
    Sift together the flour, salt and baking soda; set aside.
    Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well.
    Shape into 40 balls and place each into an ungreased mini muffin pan.
    Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

    3/4 pound (3 sticks) unsalted butter, at room temperature
    1 cup sugar
    1 teaspoon pure vanilla extract
    3 1/2 cups all-purpose flour
    1/4 teaspoon kosher salt
    1 egg beaten with 1 tablespoon water, for egg wash
    7 ounces sweetened flaked coconut
    Raspberry and/or apricot jam

    Preheat the oven to 350 degrees F.
    In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until they are just combined and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic and chill for 30 minutes.

    Roll the dough into 1 1/4-inch balls. (If you have a scale they should each weigh 1 ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve.
