Healthy cookies?

Question by gigigolosina: Healthy cookies?
I want to make some cookies but I have two problems!
1. I am trying to make some without much butter, and possibly without much sugar. My doc said that these arent to great for me
2. Every time I try to bake cookies they turn up rock hard and not chewy
So my question is….does anyone have a recipie or a healthy, yummy cookies I could make??

Double Chocolate Chip Fudge Brownies (Low Fat)

These brownies taste so good, it is hard to believe they only have about 2 grams of fat per serving. Most people are pleasantly surprised by how good low fat brownies can taste.

The original recipe called for 2 cups of sugar, but I decreased the sugar, and cut out a few more calories without sacrificing the delicious taste. I like to use a little extra applesauce when I make it, too.

To make this recipe you will need the following ingredients:
1/2 cup unsweetened applesauce
1 1/2 cup flour
1/3-1/2 cup baking cocoa powder
1/2 tsp. salt
1 egg
2 egg whites
1 1/2 cup sugar
1 tsp. vanilla
1/4 cup mini semisweet chocolate chips

Preheat your oven to 350. In a large bowl, beat the eggs until frothy. Add the sugar, applesauce, and vanilla extract, and stir until the sugar is dissolved. Then combine the flour, cocoa, and salt and add the flour mixture and chocolate chips to the egg mixture. Stir it just until the dry ingredients are moistened. Pour the batter into a 11×7 baking dish coated with nonstick spray. Bake 30 minutes. Cool in the pan on a rack. Enjoy!

Makes 15 bars.

Here are some variations you may want to try:
Leave out the chocolate chips and instead sprinkle crushed candy canes or other crushed candy on top. I used crushed mint candy canes, and it gave the brownies a subtle mint flavor!

Another hint: Cut the bars smaller. Not only do you get more servings, but each brownie has less fat per serving. (If you cut them smaller, don’t make the mistake of thinking you can eat twice as many!)

    butter or shortening (oil) is what makes cookies chewy and not hard.

    you can help some by using applesauce as the sweetener – it helps sweeten and also keeps it moist.

    but you may have to play with the recipe to get the proportions correct.

    you can sub milk instead of butter. and oatmeal cookies with dried fruit are pretty good for you. and you could use xylotol instead of sugar, its super good for you, but you will still have flat, hard cookies.

    I am not really a “healthful” person, but I try. I have tried this with cookies and they tend to be crunchy or mealy (full of grains and nuts). There are a lot of desserts that are better for your health than cookies that you can make and actually taste good. For example. Take a tortilla sprinkle with a little splenda, cinnamon and pam. Bake at 450 for about 10 minutes. Spread with about 1/2″ frozen yogurt and top with carob chips (good alternatives even for cookies) and freeze for about an hour. They are really good. Even better with nuts.
