Oatmeal Peanut Butter Cookies

1/2 cup shortening
1/2 cup margarine, softened
1 cup packed brown sugar
3/4 cup white sugar
1 cup peanut butter
2 eggs
1 ½ cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup quick-cooking oats

1.Preheat oven to 350ºF.

2.In a large bowl, cream together shortening, margarine, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined. Drop by teaspoonfuls onto ungreased cookie sheets.

3.Bake for 10 to 15 minutes in the preheated oven, or until just light brown. Don’t over-bake. Cool and store in an airtight container.

CRISPY OAT COOKIES

1 cup butter, softened
1 cup sugar
1 cup firmly packed brown sugar
1 egg
1 cup vegetable oil
1 teaspoon vanilla extract
3 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup regular oats, uncooked
1 cup crushed corn flakes cereal
½ cup flaked coconut
½ cup chopped pecans or walnuts

Cream butter; gradually add sugars, beating well. Add egg and beat well; add oil and vanilla, mixing well.

Combine flour, soda and salt; add to creamed mixture, mixing well. Stir in oats and remaining ingredients.

Shape dough into 1-inch balls. Place on ungreased cookie sheets and flatten each ball with tines of a fork. Bake at 325º for 15 minutes. Cool slightly; remove from cookie sheets and cool. Yield 10 dozen.

    4 tablespoons (1/2 stick) butter, softened
    3 tablespoons canola oil
