Question by Cathy: Does anyone have a recipes for Italian bakery cookies?
I have been looking for an italian bakery cookie recipe for years. The kind I am looking for is the ones you can dip in chocolate, fill with raspberry jelly, or just put sprinkles on. They are made with almond paste, and almond extract and are a very delicate and light cookie that crumbles when you break or bite into it. thanks!

recipe makes 3 dozen

1/2 cupbutter, softened
1/2 cupwhite sugar
3eggs
2 teaspoonsvanilla extract
3 cupsall-purpose flour
3 teaspoonsbaking powder

Directions:
1.Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2.In a large bowl, cream together the butter and sugar until smooth. Mix in the egg and vanilla. Combine the flour and baking powder; stir into the creamed mixture until blended. Divide dough into walnut sized portions. Roll each piece into a rope and then shape into a loop. Place cookies 2 inches apart on the prepared cookie sheets.
3.Bake for 8 to 10 minutes in the preheated oven, until firm and golden at the edges.
