PEANUT BUTTER COOKIES

1 1/4 c Flour
3/4 t Baking soda
1/4 t Salt
1/2 c Margarine (l stick)
1/2 c Peanut butter
1/2 c Sugar
1/2 c Packed brown sugar
1 Egg
1/2 t Vanilla

Stir together flour, soda, and salt. In a mixer bowl beat butter for 30 seconds. Add peanut butter and sugars; beat till fluffy. Add egg and vanilla; beat well. Add dry ingredients to beaten mixture; beat till well combined. Shape dough into 1 inch balls; roll in granulated sugar, if desired. Place 2 inches apart on an ungreased cookie sheet; crisscross with the tines of a fork. Bake at 375 for 9-10 minutes. Cool about 1 minute before removing to a wire rack. Makes 48. For an alternative, do not crisscross with a fork. Simply cook as directed. Upon removing cookies from the oven, place a chocolate candy Kiss in the center of each cookie, unwrappped of course. Press slightly and cool completely. You can wrap cookie dough into a 1 inch ball around a candy kiss and cook as directed. This gives you a cookie with a chocolate center.

Question by Any: flourless peanut butter cookies with natural peanut butter?
my daughter is having a party and really wanted me to make flourless peanut butter cookies, my husband bought the natural peanut butter which is really runny and she doesn’t like the taste of it. we don’t have time to go to the store again, is there anything I can do to thicken it up and get rid of the strong flavour?

Stir the oil back in to the peanut butter or you can pour it off. Once you stir the oil back in or pour off the oil you can use it just like any other peanut butter.
Once you mix the peanut butter in with the rest of the ingredients the peanut flavor will mellow out. But it is peanut butter and will taste like peanuts.
Now…do you need a recipe for a flourless peanut butter cookie?

Q&A: How to keep the crispiness of your butter cookies?

Question by johnwoon: How to keep the crispiness of your butter cookies?
I find that the crispiness my butter cookies does not last even in sealed containers.

Any ideas how to overcome this problem? Has it something to do with the recipe or the baking process or both?

Homemade cookies don’t hang around a long time here. But when I make them to mail to MY FRIENDS in college I seal them in vacuum bags. The FRIENDS tell me the cookies stay fresh during their trip in the mail and the bonus is that crisp cookies stay crisp and cakey cookies stay moist. I’ve also found that fragile cookies become much more durable when they’re united into a mass by the vacuum process.

If you’re just doing them for home use, I would imagine sealing into a few days’ supply could make a larger recipe stay in top form over the course of a week. Good for freezing too.
