Can you please tell me how to make a decent sugar free cookie?

Question by and you are?: Can you please tell me how to make a decent sugar free cookie?
Or at the least some kind of sugar free desert with items around the house. Such as splenda, flour, eggs, milk, vanilla extract,….. I am a cook, but not a baker. I am not sure of the ingredients that you need to make the cookies rise. THANK YOU

Healthy Banana Cookies Soft chewy deliciously sweet cookies
Makes 36
3 ripe bananas
2 cups rolled oats
1 tsp cinnamon
1 tsp nutmeg
maybe 2 tsp sugar or Splenda
1 tbsp ground flaxseed
1 cup raisins, chopped
1/2 cup applesauce
1 1/2 tsp vanilla extract

Preheat oven to 350 degrees.

In a large bowl, mash the bananas. Add remaining ingredients. Mix well, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet.

Bake for 15 minutes in the preheated oven, or until lightly brown.

Flourless, Sugar-Free Peanut Butter Cookies

(Makes about 2 dozen small cookies, recipe adapted from Flourless Peanut Butter Cookies from Cookie Madness.)

1 large egg
1 cup granular Splenda
1 tsp. baking powder
1/2 tsp. Mexican vanilla (or vanilla extract)
1 cup creamy natural peanut butter (check sugar content, the one I used had only 1 gram sugar per serving)
1 tsp. water
1/3 cup chopped peanuts (optional)

Preheat oven to 350 F.

In mixing bowl, use electric beater to beat together the egg, Splenda, baking powder, and vanilla for about a minute. Add peanut butter and water and beat together. (The mixture was fairly dry and broken apart. Just be sure the peanut butter is mixed well with the other ingredients.) Add peanuts if using, and blend into dough.

Use a large non-stick cookie sheet. Measure out a heaping teaspoon of batter for each cookie, then smash down with a fork. Bake 15 minutes, or slightly longer, until cookies feel firm and are slightly browned.

    These little healthy cakes are quick and simple to make, I particularly like them because you don’t have to use the oven.

    The ingredients you will need for this recipe are as follows:-

    150g Runny Honey
    80g Tahini
    100g Ground Almonds
    150g Wholemeal Flour

    As I say they are very easy to make

    Put the honey and tahini in a mixing bowl and blend together well.
    Add the ground almond, again blend well.
    Add the flour a little at a time making sure that it is mixed in well, until you have a sticky but workable dough.

    Put the griddle on to heat up to 150c degrees.
    Turn out the dough onto a floured board, and roll out to ¼” and cut into 1″ -1¼” rounds. Using more flour when needed.
    This mixture will make around 50 little cakes.
    Place them on the griddle a few at a time.
    Cook on each side for 3 minutes.

    These little cakes can be served hot or cold, I prefer them cold, they make a great healthy bite.
