i am wondering if you can make a pie crust using a shortbread cookie recipe? does anyone have any good recipes for a pie crust like a shortbread cookie?

It works great. I’ve used a shortbread type dough for baked cheesecakes for years. Depending upon the thickness of your crust you want to parbake the crust first. That’s what I do with the cheesecake. I would think that it would be very good with any number of cream pies.

    You sure can. The proportions are 1 1/4 cup flour, 3 Tbl cornstarch, 1/4 cup sugar 1/2 cup butter (1 stick). Use well-chilled butter and cut into small pieces. Combine the flour, cornstarch and sugar. Add pieces of butter and cut butter into dry ingredients. You can pulse in a food processor, or do by hand. If you use your fingers to work the butter into the flour, then work quickly so the warmth of your fingers does not melt the butter. After pre-baking, pour your filling into the crust and bake the pie. The total amount of bake time at 325F would be about 40 minutes, including the pre-bake time.
    A variation on this recipe is to pre-bake the shortbread shell for the full 40 minutes, allow to cool, then pour in a pudding, mousse or other cold filling, and chill.
