Can potato flour be used as an alternative to gluten free flour for a person with Celiac Disease?

Question by Natural Mom: Can potato flour be used as an alternative to gluten free flour for a person with Celiac Disease?
Gluten free flour is so expensive!!! Potato flour is not. I’m looking for a flour I can use to make bread, waffles, cookies, cakes, and use in frying.

I have found individual flours do not work as well as flour mixes in most applications. You could sure experiment and see if you like it but I caution you against getting your hopes up.

It depends on what your making.I have found that if you mix potato with another flour like rice flour, which is pretty inexpensive*u could do like 2/3 potato and 1/3 rice*, then you are still saving money compare to using all rice flour. Also you use guar gum or something like it. I forget which gum it is but it is made from corn so if your also sensitive
