Can I use soy gluten free flour like regular flour?

Question by daniellvip: Can I use soy gluten free flour like regular flour?
I need to make chocolate chip cookies with gluten free flour I bought…”ArrowHeadMills Organic Soy Flour” and it doesn’t say if I need to add anything to it to use it in place of regular flour… anyone know?

I tried to use it in a pancake recipe, like regular flour and it did not turn out well at all !!! I wouldn’t recommend it. My daughter is allergic so I thought i would try it.

    I actually just saw an episode of Good Eats with Alton brown, where he make gluten free chewy chocolate chip cookies. He used rice flour, but it may work in a similar way. He said that becuase the glueten is not there, which causes some of the chemical reactions required for baking, that you have to add something to approximate that reaction. He used a little bit of tapioca flour and xantan gum.
