Question by diane r: Can dough be left on the counter overnight or must it be refrigerated? No yeast?
I want to make Mexican shortbread cookies – it is basically flour, sugar, and lard – no yeast – my recipe says to let it set for a few hours to overnight – it would be best for me to let it sit overnight – my husband says if i leave it overnight it MUST be refrigerated – I say it is fine on the counter – but I really have NO idea – any advice would be appreciated – i am not a baker!

I think it is best refrigerated, but it will depend on the room temperature.

    Hi, either will be ok, but if you are in a hot climate the fridge will be best.Remember to cover the dough with a cloth to stop the air getting to it and making a crust.

    I would refrigerate to be safe. Does it contain eggs, butter, etc.? Things that would normally require refrigeration? I would put it in there to be safe, that way you don’t eat it and be sick with food poisoning, food poisoning sucks….bad.
