Betty’s Best-Ever Peanut Butter Cookies Recipe

In this video, Betty demonstrates how to make her all-time favorite peanut butter cookies. Out of hundreds of recipes tested and adapted, this one is Number One! Ingredients: 1 cup creamy (smooth) peanut butter 1/2 stick butter 1/2 stick margarine 1/2 cup white sugar 1/2 cup brown sugar, firmly packed 1/2 teaspoon vanilla extract 1 egg 1 1/2 cups self-rising flour Cream 1 cup peanut butter, 1/2 stick butter, 1/2 stick margarine, 1/2 cup white sugar, and 1/2 cup brown sugar until smooth. Add 1/2 teaspoon vanilla extract and 1 egg. Beat well, until all ingredients are well-combined. Stir in 1 1/2 cups self-rising flour, until mixture turns into a ball shape. Cover with plastic wrap and refrigerate for 4 hours or overnight. When ready to make cookies, roll small pieces into 1-inch balls and place them about 2 inches apart on a baking sheet. Use a fork to flatten each ball with a criss-cross pattern. Bake in an oven that has been preheated to 375 degrees for 10 minutes. Remove from the oven when done, and immediately place on a cooling rack or flat platter to maintain their shape while cooling. When cool place in a zip-lock plastic bag or sealed container for storage. These are the yummiest of cookies, and a great comfort food!

I made these last night. I just used butter instead of the margarine/ butter mixture simply because all I had was butter. They were so delicious! Thank you Betty!

  2. bettyskitchen says:

One stick butter = 113 grams. One cup sugar = 192 grams. Google = your friend.
    –Betty :)

  3. nutrock87 says:

I like your kitchen Betty. I’m trying this recipe tomorrow but how many grams is a stick of butter and cup of sugar? I’m in England, we don’t measure like that.

  4. 2livelifelove says:

  5. beelynnvo says:

  6. bettyskitchen says:

Just until it reaches the heat you have set.

  7. leahVOICE8778 says:

  8. al982982 says:

I made these as a present for my parents anniversary. I was too cheap to buy them a present. Aww, the suckers, but they loved the cookies!

  9. vladycrew says:

betty, if you are trying to be healthy with the peanut butter, better use natural unsweetened peanut butter instead of reduced fat one, the reduced fat peanut butter has trans fats, lots of sugars and alot of the worst chemicals… natural peanut butter keeps you healthy. fat free is not always healthy… thank you :)

  10. Myambitions213 says:

Just made the cookies and they came out good

  11. bettyskitchen says:

If you make any changes at all in the ingredients, then your result may be different than what you saw in the video. I have made this recipe dozens of times, and it always comes out the same.
    –Betty :)

  12. bettyskitchen says:

No, it has just been in the refrigerator, so it is ready to work with.
    –Betty :)

  13. coconut3636 says:

thk you for your reply. I have made some cookies using your recipe, it was yummy! But my cookies seems like it is too crusty and it falls apart easily. Where did I go wrong?

  14. coconut3636 says:

thk you for your reply. After I chill it, do i need to thaw it before i bake it?

  15. bettyskitchen says:

You will be sacrificing on the taste a little bit, but the cookies will still be good, just not as sweet.
    –Betty :)

  16. coconut3636 says:

Hi Betty, can I reduced to using just only 1/2 cup of white sugar and omit the brown sugar totally?

  17. coconut3636 says:

Hi Betty, I’m very concerned with the use of sugar. Can I reduced the sugar to just only 1/2 cup of white sugar and omit the brown sugar totally?

  18. grietjeheidi1 says:

  24. chenaydouglass says:

What can you use if you dont have shortning?

  25. crazychild250 says:

she probably took them out before she filmed when she mixed it cuz there was a cut in between.

  26. jangard3 says:

I was always taught that when making cookies mix the liquids and dry ingredients separately before mixing them together. Makes more sense to me! Also, if you crack your eggs in a little bowl first it’s easier to remove the shell if you mess up!

  27. jangard3 says:

Dipping the fork in flour or sugar will also keep it from sticking. :-)

  28. oceancitygirl1985 says:

Follow the video not the description. I made these using the video instructions and they turned out perfect.

  29. ATSMONSTER says:

    hehe….one inch balls….i’m so immature -.-

  30. gurlal singh says:

hi, is it 3/4 tsp of baking soda?as u said in the video?or its 3/4 tsp of baking powder as what u wrote in description?just confuse which one ill follow, i really wanna try this=)thank anyway

  31. oceancitygirl1985 says:

And I was the one who just added a pic of the cookie to your Facebook (as well as the lemon bar the other day :) )

  32. oceancitygirl1985 says:

I just made these using butter since I don’t like margarine. I think anytime it says to use margarine in a recipe, you can use butter instead.

  33. oceancitygirl1985 says:

Just made these since my mom loves peanut butter and she ate 3 of them, lol :) Another successful recipe :) In the description box, you forgot to include adding in the shortening and mixed up the baking powder and baking soda amounts ;)
