Question by pun82224: Been looking for a nice lemon cookie recipe?
When I was very young this lady made these great lemon cookies but had since passed away so I am in hopes that I might find it .

    1 cup sugar
    8 tsp. baking powder
    3 eggs
    3/4 cup milk
    1/2 cup butter
    4 tsp. lemon extract
    Mix all ingredients together. Drop onto greased cookie sheet. Bake at 400 degrees for 5 to 7 minutes.

    prep time: 15 min
    cook time: 10 min
    ready in: 25 min

    you will need: all purpose flour, baking soda, baking powder, butter, eggs, vanilla extract, vanilla ice cream, splenda, lemon

    1. preheat oven to 375 degrees F.

    2. in one bowl, mix 2 3/4 cups of flour, 1 tsp of baking soda, and 1 1/2 tsp of baking powder.

    3. turn stove on low/medium heat and put a pot on top. fill pot half way with water.

    4.use heat-safe bowl and mix in 1/2 cup of butter softened, 1 cup of splenda and a room temperature egg. make sure egg is room temperature or there will be clumps. put bowl over pot and make sure the water does not touch the bowl. cream or beat until soft and fluffy. add a scoop of vanilla ice cream and add splashes of vanilla.

    5. add lemon juice and zest of lemon.

    6. gradually add in dry ingerdient and roll onto cookie sheet.

    7. bake for 8-10 minutes

    8. cool on cooling rack

    9. decorate with icing, sprinkles, or candy

    10. serve and enjoy! good for parties, dinners, bdays, class treats, holidays, etc.
