    Cream Cheese Delights

    1/2 cup margarine
    1 pkg 3 ounce cream cheese
    1/2 cup sugar
    1 egg yolk
    1 tsp vanilla
    1 cup flour
    1 tsp salt
    halved marashino cherries

    Cream margarine, cream cheese and sugar. Then add egg and vanilla. Combine flour salt gradually to the creamed mixture. Drop by tsp. Top each with a half of a cherry. Bake at 350% for 12-15 minutes. Cool before taking up.

    My family loves my peanut butter balls at Christmas. My son’s insist I make these every year. They are melt in your mouth delicious. In fact I made about 6 dozen just tonight.

    There are a couple of nice things about them too:
    They hold up really well. You can make them two weeks before the holidays and put them in the freezer or refrigerator.

    You can make them with either milk or dark chocolate, depending on your preference.

    Here are the ingredients:
    * 1 ½ cups peanut butter, Skippy or equivalent, not natural peanut butter
    * 3 and 1/2 cups of powdered sugar
    * ½ cup butter. softened
    * 1 tsp. vanilla

    The Chocolate coating ingredients:

    In a double boiler add:

    * 12 oz. bag of milk or dark chocolate chips, Guitard is my favorite for its flavor
    * 2 Tbs. shortening

    Deluxe Sugar Cookies

    1 1/2 C powdered sugar
    1 C margarine, softened
    1 egg
    1 teaspoon vanilla
    1/2 teaspoon almond extract
    2 1’2 C flour
    1 teaspoon baking soda
    1 teaspoon cream of tartar

    Combine flour, soda and salt. Set aside.

    Cream together sugar and margarine. Add extracts and egg. Gradually add dry ingredients. Keep scraping sides of bowl.

    Divide dough into two balls. Wrap tightly in plastic wrap and refrigerate overnight or for at least 3 hours.

    Preheat oven to 375.

    Working with one ball at a time, divide dough in half. Roll each half to 3/16 inch thick on a lightly floured board. Cut into desired shapes with cookie cutters. Place on ungreased cookie sheet. Bake 7 – 8 minutes or until edges are light brown. Frost and decorate as desired.
