I’m really craving Mexican Nut Cookies and I’m not completely sure on how to make them does anyone have a recipe for them?
Yeah Mexican Wedding Cookies, but there are so many diffrent recipes and i don’t know which one it is.
This is one i found which seemed yummy but wasn’t sure if it was the right one:
MEXICAN NUT COOKIES

1 c. butter
2 1/2 c. flour
1/2 tsp. salt
1/2 c. powdered sugar plus 2 c. extra for coating
1 c. finely chopped nuts (walnuts or pecans)
1 tsp. vanilla
1/4 tsp. almond extract

Cream butter, sugar, vanilla and almond extract. Add flour, salt and nuts. Mixture will be somewhat dry. Pinch off some dough roll into balls. Bake at 350 degrees for 12-15 minutes. When still warm roll (gently) in powdered sugar. Store airtight, cover with more powdered sugar.

    MEXICAN WEDDING COOKIES
    This delicate sweet dessert will be a surprising treat for people who think Mexican food is always hot and spicy:

    1/2 c butter
    2 T powdered sugar
    1 c flour
    1 c chopped pecans
    1 tsp vanilla

    Cream together butter and sugar until light. Add flour, pecans, and vanilla. Roll dough into 1″ balls. Place on greased baking sheet and flatten slightly. Bake at 300º for 25-30 minutes. Roll in additional powdered sugar while warm. Let cool, roll again in sugar.

    Be careful to bake only until a light brown color. Cookies may be stored for several days; sprinkle with powdered sugar before serving. Makes 25-30 cookies.

    This recipe is different than yours in the fact that the ratio of nuts to the flour is greater. Mine will have more nuts in it – yours will have more flour.
